Zepoli (Sfingi)

  • 1 lb Ricotta
  • 1 3/4 – 2 cups flour
  • 5 eggs
  • 1 tbs. Vanilla Extract
  • 4 tbs. Baking Powder
  • 2 tbs. Liquor such as orange curacao
  • confectioners sugar
  • pinch salt
  • oil for frying

 

Combine all ingredients (except sugar), adding eggs one at a time. Let stand for about 10 minutes. Heat enough oil to deep fry in a large saucepan.

 

Drop one tsp. of batter at a time into hot oil & fry until golden brown. Let cool & top with confectioners sugar.
